Spring Pea Soup

I love eating soup for lunch.  I have it just about every day.  The right soup is a great filler, for not that many calories.  Plus you can load them up with veggies and easily get two or three of your daily servings in one simple bowl.

Today I have a Spring Pea Soup recipe.  Making soups is about as easy as you can get.  I am calling it spring because it is light and fresh, not your normal heavy split pea soup.

For this batch, I used canned stock simply because I did not have any homemade stuff on hand.  When I use the store bought stock, I always add in some extra bullion for added flavor.  Plus I tend not to add any salt, since the store bought stuff is usually already salty enough.

The best part is that 2 cups of this soup is only 3 Weight Watchers Points!  Can't go wrong with that.  This recipe should yield 5 or 6 servings.

  3. tasty recipe. A must try since I too love soup. My favorite soup to make is carrot/ginger. Not sure on the calories but since it's also made with broth I'm sure they are few.

  4. sounds delicious. I've never made green pea soup. My fav to make and eat is vegetable soup with tomatoe, okra, and the other veggies.
